This is a lovely delicious cake! I used walnuts simply because I have walnuts in my pantry and also because macadamia costs a bundle over here, so I never stocked up on macadamia nuts! I made half a recipe using two medium ripe bananas and substitute the sour cream for yoghurt. And aslo for half a recipe, I reduced the sugar slightly to 1/4 cup, and it turns out just nice. The bananas are blended to a puree along with the eggs, oil, rum, yoghurt and vanilla extract, which gives a runny consistency. The mixture is then added to the dry ingredients, mix to combine and spread evenly in the baking pan. This method is exactly that of making muffins. The top is then sprinkled with the nuts and the mixture of cinnamon-sugar. Bake till done.
I love the most is the chewy coconut flakes, so fragrant and delightful. This cake has a very moist and so very soft texture, almost spongy! Of course the taste and smell of the bananas are wonderful and I like the nutty "cinnamony" topping.
See the bits of the flaked coconuts, makes a delicious chewy texture to the soft and moist cake.
